Ingredients
  

Brownie Layer:

  • 1 cup 225g unsalted butter
  • 8 oz 225g semisweet chocolate (60-70% cacao)
  • 1 ½ cups 300g granulated sugar
  • ¾ cup 90g Dutch-process cocoa powder
  • ½ tsp salt
  • 4 large eggs room temperature
  • 1 tbsp vanilla extract

Cheesecake Swirl:

  • 8 oz 225g full-fat cream cheese (softened)
  • 1 large egg yolk
  • ¼ cup 50g sugar
  • 1 tsp vanilla

Cherry Layer:

  • ½ cup 160g cherry preserves
  • 1 tbsp cornstarch

Instructions
 

Prep & Preheat:

  • Line a 9x13" baking pan with parchment paper.
  • Preheat oven to 350°F (175°C).

Melt Chocolate Mixture:

  • In a double boiler, melt butter and chocolate until smooth.

Brownie Batter:

  • Whisk sugar into the warm chocolate.
  • Add eggs one at a time, then vanilla.
  • Fold in sifted cocoa powder and salt (do not overmix).

Cheesecake Layer:

  • Beat cream cheese until creamy.
  • Mix in egg yolk, sugar, and vanilla until just combined.

Assemble:

  • Spread ⅔ brownie batter in the pan.
  • Dollop cheesecake mixture over the top.
  • Add remaining brownie batter and swirl with a knife.
  • Mix cherry preserves with cornstarch and drizzle over the top.

Bake:

  • Bake 30-35 minutes until edges are set but the center jiggles slightly.

Cool & Serve:

  • Cool completely (3 hours) before slicing into 16 squares.
